Fregola Sarda with Seafood-Mix
You need

For 4 servings:

  • 1 onion
  • 1 clove of garlic
  • 200g Cherry tomatoes
  • 300 g Lauenroth Seafood-Mix "Italia"
  • 2 tbsp oil
  • 400 g Fregola (pasta)
  • 50 ml white wine
  • 1 liter fish stock
  • 1 pinch of saffron
  • 1 lemon
  • salt & pepper
  • Parsley

Preparation

  • Peel and finely chop the onion and garlic and halve the cherry tomatoes..
  • Sauté the onions and garlic in the pan. Add the fregola and sauté briefly. Deglaze with white wine and gradually add the fish stock. Simmer for approx. 15 minutes.
  • Add the cherry tomatoes, the seafood-mix and saffron about 3 minutes before the end of the cooking time. Season with salt and pepper to taste..
  • Then remove the pan from the heat, cover and leave to rest for a further 5 minutes.
  • Serve the salad on a plate, season with lemon to taste and garnish with parsley.
